Warm Carrot Salad

INGREDIENTS  I  SERVES 2:
2 tbsp olive oil
1 pack of carrot sticks
1 small glass of cooked chick peas
2 apples
8 dried figs
125 g fresh goat cheese
italian herbs
pepper
walnut oil

PREP: 5M  I  COOKING: 15M

INSTRUCTIONS:

Heat the olive oil in a pan and roast the carrots at medium heat for 15 minutes.

Fill one part in a bowl. Put the other half in a food container.

Drain the water from the glass of chickpeas. And split the chickpeas between the peel and the food container.

Wash the apples, remove the seeds and cut into pieces. Cut the figs into pieces and also divide them up.

Flavour with pepper and Italian herbs and sprinkle with walnut oil.

 

Health

There's a lot of magnesium in figs. This helps to reduce stress and strengthen the heart and circulation. They free you from nervousness and do not make you fat. Carrots are extremly low in calories and are therefore one of the healthiest vegetables. When preparing carrots, it is important to add a little fat to the dish, because the healthy carotene contained in carrots is fatoluble. Thus, it can better absorbed by the body. Chickpeas are a great source of energy. They keep the blood sugar level constant and even reduce stress. The high protein content of chickpeas is beneficial for mental performance. Similar to chickpeas, quark also has a very high protein level, which boosts mental performance.

 

Pleasure

Keep the food container in the fridge for the next day. Or you can make the salad fresh in the office the next day. You don't have to warm the carrots again.
