Cauliflower Lentil Salad
INGREDIENTS I SERVES 2:
300 g frozen broccoli
1 tin of pre-cooked lentils
125 g goat yoghurt
2 tbsp peanuts
PREP: 5M I COOKING: 6M
Bring a small pot of 300g water to the boil. And cook the broccoli over medium heat for 6 minutes.
Tilt the liquid out of the can of lentils and arrange the lentils in a bowl.
Add the cooked broccoli to the lentils, sprinkle with goat yoghurt and season with basil and pepper.
