Broccoli Coconut Soup
INGREDIENTS I SERVES 2:
500 g frozen broccoli
500 g water
400 g coconut milk
1 tbsp Italian herbs
1 tbsp olive oil
PREP: 5M I COOKING: 10M
Put the broccoli in a large pot and fill up with water.
Cook at medium heat for 10 minutes until the broccoli is soft.
Puree the soup. Add the coconut milk, Italian herbs and pepper to the soup. Puree once again.
Pour into a bowl, arrange with basil and drizzle with olive oil.

The soup can be kept in the fridge for 2-4 days. Or you can freeze it in a special box. You don't need to warm up the soup, it's also a delicious cold soup.
