Actually, I'm not much of a fan of salad. Lately I've posted quite a few by my standards. Why? Because salad is perfect for hot days. Light, fresh and healthy. Like this one.
Spicy Orange Salad
INGREDIENTS I SERVES 2:
2 small yellow peppers
1 small romana salad
1 tsp Dijon mustard
juice of half a lemon
2 tbsp olive oil
1 tsp chopped oregano
PREP: 10M I COOKING: 0M
Cut the peeled oranges into thin slices.
Wash and dry the peppers and salad.
Cut the peppers into fine strips and pluck the salad into bite-sized pieces.
For the vinaigrette alke ingredients to a cream mix.
For the salad, sprinkle the salad on plates and drizzle with the vinaigrette.
Salads are the ideal food in summer because they are light, quick to prepare and do not stress the body in the heat.
You can keep the remaining salad in the fridge until the next day without dressing. Fill the dressing into an extra container. Leave it in the fridge half an hour before eating so that you can enjoy the full aroma.
