Grilled Peppers with Avocado Cream
INGREDIENTS I SERVES 2:
2 tbsp olive oil
juice of half a lemon
PREP: 10M I COOKING: 5M
Wash the peppers, remove the core and cut into strips.
Drizzle with olive oil and place on the grill for 5 minutes until brown strips of grill have formed.
Cut the avocados in half and remove the seeds. Put the avocado meat in a tall container with the lemon juice and pepper.
Puree with a hand blender until a cream is formed.
Arrange the finished pepper strips on plates and enjoy with the avocado cream.
