Melon and Tomato Salad
INGREDIENTS I SERVES 2:
1 small piece of watermelon
250g mini tomatoes
40g Romaine salad
1 tsp Dijon mustard
juice of half a lemon
2 tbsp olive oil
1 tsp chopped oregano
40g goat's cream cheese

Cut the watermelon into small pieces.
Wash and quarter the tomatoes.
Remove the stalk from the lettuce leaves and pluck them into bite-sized pieces.
Put everything in a bowl.
For the vinaigrette mix mustard and lemon juice in a small bowl and add the olive oil slowly, stirring constantly.
Divide the salad into 2 portions and garnish with fresh goat's cheese. Drizzle the portion with the vinegraitte for immediate consumption and enjoy. Put the portion to go without the dressing in the fridge for the following day.
Eating watermelon on hot days is not only refreshing but also good for your health. Because the fruit contains a lot of nutrients. The riper the watermelon, the better. Ripe melons contain a lot of lycopene and vitamin A. Lycopene is an antioxidant that strengthens the heart, bones and immune system. Watermelons also contain vitamin A. It keeps the eyes fit and promotes growth of skin and hair. The high fibre content in the melon improves and regulates digestion and thus helps to counteract constipation. The seeds also supply proteins, vitamin B, magnesium and good fats. The greatest effect should be provided by germinated and peeled cores.
Wrap the remaining Romaine lettuce in moist kitchen paper, pack in a freezer bag and place in the vegetable compartment of the refrigerator. This way it stays fresh for 2-3 days. Keep the salad in the fridge without dressing for the following day. So you have a refreshing lunch to go. Store the dressing in a small cup in the fridge and pour over the salad before eating.
